Job Summary
Responsible for all front and back of the house (F&B) operations for two dining facilities and other food services operations to include two Starbucks coffee shops, a full-service catering department, two full-service bars, a Subway, and two quick service restaurants. Directly supervise the Unit Managers, Food Service Site Managers, Senior Supervisors, and all non-culinary staff at ERF, FBI Lab, bars, and coffee shops. Plan and implement budgets, hire, train and supervise subordinates. Maintain all standards and expectation as it pertains to the contract site.

Primary Duties

  • Monitor the performance of a staff of 175-200 to ensure adherence to all service standards and productivity standards to ensure exceptional guest satisfaction.

  • Monitor and develop an operating budget for all revenue outlets; after approval, monitor and take corrective action as necessary to help assure that budget goals are attained.

  • Monitor and control food, bar, and labor costs.

  • Develop on-going professional development and training programs for food production, service and bar production/service personnel.

  • Serve as a backup to the Director of Food Service when the Director is unavailable. Ensure continuity of management responsibilities and oversight.


Additional Responsibilities

  • Ensure compliance with all standard operating procedures for revenue and cost control.

  • Help plan marketing and sales promotion activities for operations.

  • Maintain cleanliness and sanitation levels to Health Department required ratings.

  • Develop and implement policies and procedures. Conduct inspection to ensure that all safety, sanitation, energy management, preventive maintenance and other standards are consistently met.

  • Exhibit a positive and involved team attitude to all and promote positive relations through an environment that encourages open communications, trust, and mutual respect. Strong communication, organization, problem-solving, and follow-up.

  • Manage and motivate all food and beverage personnel.

  • Manage interviewing, staffing, training and development of food and beverage teams. Implement new menu items that will increase customer satisfaction and perception of value.

  • Maintain appearance, upkeep and cleanliness of all food and beverage equipment and monitor employee dress codes according to policies and procedures including strong focus on providing exceptional and accurate customer service to both internal and external individuals.

  • Perform other responsibilities as assigned.

Qualifications: Education, Experience, and Certification(s)

  • Bachelor's degree in a related field or equivalent food service industry management experience required.

  • Minimum eight (8) years' experience managing a high-quality commercial food and beverage establishment and operation, preferred.

  • Must have completed a formal course of study equivalent to the National Institute of the Food Service Industry (NIFI) course in applied food service sanitation or one that meets minimum requirement of Health and Human Services Publication No. (FDA) 76-1009, as amended.

  • ServSafe certification (to be renewed every 5 years) is required. Certification of successful completion must be obtained either prior to employment or within sixty (60) days thereafter. Training in Hazard Analysis and Critical Control Points (HACCP) is also required.


Knowledge, Skills, and Abilities

  • Must be able to pass and maintain an FBI Security Clearance.

  • Confident, clear, and professional written and verbal communications skills.

  • The ability to manage in a diverse environment with focus on client and customer services, entrepreneurship in building and growing a strong business.

  • Proficiently in all Microsoft suite applications is required.

  • Must be able to communicate effectively with clients, customers, and support staff and be able to respond effectively to changing demands.

  • Ability to organize multiple projects; manage and prioritize multiple tasks and meet deadlines.
